Gıda sanayinde kullanılan kıl fırçaların orijininin tespiti

Abstract

Gıda imalathanelerinde kullanılan fırçaların neredeyse tamamı piyasada yağlı boya fırçası olarak satılan kıl fırçalar olup, bunların üretiminde çoğunlukla domuz kılı kullanılmaktadır. Gıda sektöründe üreticilerin önemli bir kısmı tarafından bilinçsizce kullanılan bu fırçaların kılları, uygulama sırasında kopmak suretiyle veya yüksek sıcaklıkta eriyerek temas ettiği gıdaya bulaşabilmektedir. Bu sebeple, bu çalışmada gıda imalathanelerinde yaygın olarak kullanılan doğal kıl fırçaların orijininin, güvenilir bir yöntemle tespit edilmesi amaçlanmıştır. Bu amaçla gıda imalathanelerinden ve piyasadan toplanan kıl fırçalar, real-time PCR yöntemi ile türe spesifik primerler kullanılarak analiz edilmiş ve fırça kıllarının orijini tespit edilmiştir. Sonuçta analiz edilen toplam 22 adet fırça kılı örneğinin %90’ının (20 tanesinin) domuz kılından üretildiği tespit edilmiştir. Araştırma sonuçlarının, helal gıda tüketimi konusunda hassasiyeti bulunan tüketicilerin bilinçlenmesi ve kıl fırçaların kullanıldığı gıdalara yönelik helal sertifikasyon çalışmalarında metot konusundaki ihtiyacın karşılanmasına katkı sağlayacağı düşünülmektedir.

Almost all of the brushes used by food producers are pastry brushes which are known as paint brushes, and in their production, generally pig hair is used as natural bristles. The bristles of brushes which are unconsciously used by a significant proportion of the food manufacturer in the food industry may contaminate the food products by breaking away or melting at high temperatures during the processing. Therefore, in this study, it is aimed to determine clearly the origin of natural brushes that commonly used by food producers, using a reliable analytical method. For this purpose, the origin of the shaft of the brushes that collected from the food producers and paint market was determined by using real-time PCR method with a species-specific primers. In the results, it was found that 20 brush samples in a total of 22 samples analyzed were produced from pig hair. In the results, it was thought that the findings of this study will contribute to the awareness of consumers who are sensitive about halal food consumption and to meet the need for the method in halal certification processes of the foods that contact with pastry brushes.
